Ingredients

  • 1 lb ground beef (80/20)
  • 6 small flour tortillas
  • 6 slices cheddar cheese
  • Salt and pepper, to taste
  • 1 cup shredded iceberg lettuce
  • 1/2 cup diced pickles
  • 1/4 cup diced red onions
  • 1 tablespoon neutral oil (like avocado or canola)
  • 1/2 cup mayonnaise
  • 2 tablespoons finely chopped pickles
  • 1 tablespoon yellow mustard
  • 1 tablespoon ketchup
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  1. Make the Sauce: In a small bowl, mix together mayonnaise, chopped pickles, mustard, ketchup, onion powder, garlic powder, and paprika until smooth. This is your Big Mac-inspired taco sauce. You can make this ahead of time and store it in the fridge for up to a week.
  2. Prep the Beef: Divide the ground beef into 6 equal balls. Don’t overwork the meat — you want it tender. Season each with a pinch of salt and pepper.
  3. Heat and Smash: Heat a large skillet or griddle over medium-high heat. Lightly oil the pan. Place one tortilla down, and immediately top it with a beef ball. Use a spatula or burger press to firmly smash the beef onto the tortilla, pressing it flat and thin.
  4. Crisp and Flip: Cook for about 2–3 minutes until the edges are browned and crispy. Flip the tortilla so the beef is now facing down. Place a slice of cheddar on top of the cooked beef, let it melt slightly (about 30 seconds), then remove from the pan.
  5. Assemble the Tacos: Top each taco with shredded lettuce, diced pickles, red onions, and a generous drizzle of the Big Mac sauce. Fold and serve warm. You can also serve them open-faced like mini tostadas.
