Description

Deliciously soft and chewy cookies packed with oats and carrots, perfect for a snack or dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 3/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 cup finely shredded carrots
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 ounces cream cheese, softened (optional for frosting or filling)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg until well combined.
  3. Mix in the shredded carrots and cream cheese (if using), then stir in the flour, oats, baking soda, cinnamon, nutmeg, and salt until just combined.
  4. Fold in the chopped walnuts until evenly distributed throughout the dough.
  5. Scoop tablespoonfuls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  6. Bake for 11-13 minutes, or until the edges are golden brown.
  7. Allow the cookies to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For frosting, use the optional cream cheese to add a creamy topping.
