- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 3/4 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 cup finely shredded carrots
- 1/2 cup chopped walnuts
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 ounces cream cheese, softened (optional for frosting or filling)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg until well combined.
- Mix in the shredded carrots and cream cheese (if using), then stir in the flour, oats, baking soda, cinnamon, nutmeg, and salt until just combined.
- Fold in the chopped walnuts until evenly distributed throughout the dough.
- Scoop tablespoonfuls of dough onto the prepared baking sheets, spacing about 2 inches apart.
- Bake for 11-13 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For frosting, use the optional cream cheese to add a creamy topping.
