Description

A delicious creamy chicken and rice dish.


Ingredients

Scale
  • 2 cups cooked rice (preferably white or jasmine)
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the rice according to package instructions or heat leftover rice.
  2. In a large skillet over medium heat, add olive oil and butter. Once melted, add chicken strips seasoned with salt and pepper. Cook for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, lower heat to medium-low and add minced garlic. Sauté for 1 minute until fragrant.
  4. Pour in chicken broth, scraping bits off the bottom of the pan, and heat through for an additional 2-3 minutes.
  5. Remove from heat, garnish with chopped parsley, and serve immediately.

Notes

  • For a richer flavor, you can add additional seasonings to the chicken while cooking.
  • This dish pairs well with steamed vegetables or a light salad.
