A delicious creamy chicken and rice dish.
Ingredients

- 2 cups cooked rice (preferably white or jasmine)
- 1 pound boneless, skinless chicken breasts, cut into strips
- 4 cloves garlic, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ¾ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the rice according to package instructions or heat leftover rice.
- In a large skillet over medium heat, add olive oil and butter. Once melted, add chicken strips seasoned with salt and pepper. Cook for 5-7 minutes until golden brown and cooked through. Remove and set aside.
- In the same skillet, lower heat to medium-low and add minced garlic. Sauté for 1 minute until fragrant.
- Pour in chicken broth, scraping bits off the bottom of the pan, and heat through for an additional 2-3 minutes.
- Remove from heat, garnish with chopped parsley, and serve immediately.
Notes
- For a richer flavor, you can add additional seasonings to the chicken while cooking.
- This dish pairs well with steamed vegetables or a light salad.
