- 2 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh strawberries, hulled and halved
- 4 cups baby spinach, washed
- 1/2 red onion, thinly sliced
- 1 tbsp fresh ginger, grated
- 3 tbsp lime juice (freshly squeezed)
- 3 tbsp extra virgin olive oil

Instructions
- Cook the Chicken: Preheat grill or skillet over medium heat. Season chicken with salt and pepper. Grill for 6-7 minutes per side until cooked through (165°F/75°C). Let rest before slicing.
- Prepare the Dressing: In a small bowl, whisk together grated ginger, lime juice, olive oil, salt, and pepper until well combined. Adjust seasoning as needed.
- Chop Your Ingredients: While the chicken rests, slice strawberries and onion.
- Assemble the Salad: In a large bowl, combine spinach, strawberries, and onion. Toss gently to mix.
- Add Chicken & Dressing: Slice chicken into bite-sized pieces and place on the salad. Drizzle generously with the dressing.
- Serve & Enjoy: Plate portions immediately for best flavor.
