Chicken Taco Salad

Description

A delicious and fresh chicken taco salad with a homemade dressing.


Ingredients

Scale
  • 2 cups cilantro
  • 3 limes
  • 11/2 tablespoons diced jalapeño
  • 1/4 cup olive oil
  • 3 tablespoons rice vinegar
  • 1 tablespoon Dijon-style mustard
  • 2 teaspoons granulated sugar
  • Salt
  • Pepper
  • 1 pound ground chicken
  • 1 red onion
  • 1 to 2 cloves garlic
  • 1 packet (1-ounce) taco seasoning
  • 8 cups romaine lettuce
  • 1 can (15-ounce) black beans
  • 1 cup fresh corn
  • 1 large avocado
  • 11/4 cups cherry tomatoes
  • 1/2 cup extra sharp Cheddar cheese

Instructions

  1. Combine all the dressing ingredients except for the olive oil in a blender or food processor. Add salt and pepper to taste. Pulse until ingredients are combined, then drizzle in olive oil, quickly pulsing until emulsified.
  2. Add olive oil to a large cast-iron skillet and heat over medium-high heat. Once shimmering, add in finely diced red onion and minced garlic. Stir often, cooking until tender, about 5 minutes. Reduce heat if it starts to burn. Add ground chicken and cook for 6–8 minutes or until cooked through. Add taco seasoning, reduce heat to low, and season to taste with salt. Remove from heat.
  3. Wash and chop the lettuce. Cut into ribbons and halve the ribbons. Use a salad spinner to ensure the lettuce is dry before adding any other ingredients.
  4. Prepare other ingredients: thinly slice remaining red onion, drain and rinse black beans, prepare the corn, halve the cherry tomatoes, chop avocado, and shred cheese. Add to the salad.
  5. If serving immediately, pour dressing over salad, toss, and enjoy! Add additional lime wedges and cilantro to individual plates.

Notes

  • For a milder dressing, reduce jalapeño.
  • Adjust seasoning to personal preference.
  • Ensure the lettuce is completely dry for optimum dressing adherence.
