Instructions

  2. Add the eggs and vanilla extract and mix until smooth and creamy.
  3. Stir in the rolled oats, flour, and salt just until a thick dough forms.
  4. Fold in the chocolate chips until evenly distributed.
  5. Cover the bowl and let the dough rest at room temperature for 30 minutes.
  6. Using a large cookie scoop, portion the dough into large balls and place on the prepared baking sheet, spacing evenly apart.
  7. Bake for 11 minutes, or until the edges are lightly golden.
  8. Let the cookies rest on the baking sheet for 3 minutes to finish setting.
  9. Transfer to a wire rack to cool slightly, then serve warm for the best texture and flavor.
