Description

A deliciously creamy chicken tortellini dish made in a slow cooker that’s perfect for a cozy meal.


Ingredients

  • 1 pound cheese tortellini
  • 2 cups cooked chicken, shredded
  • 3 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 2 tablespoons butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a slow cooker, combine the shredded chicken, heavy cream, chicken broth, garlic powder, onion powder, black pepper, salt, nutmeg, and butter.
  2. Stir in chopped sun-dried tomatoes.
  3. Cover and cook on low for 2–3 hours or until heated through.
  4. 30 minutes before serving, add tortellini and spinach.
  5. Stir gently, then sprinkle in the Parmesan cheese.
  6. Cover and cook for another 20–25 minutes, or until tortellini is tender.
  7. Garnish with fresh parsley and additional Parmesan if desired. Serve hot.

Notes

  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
  • The nutmeg is optional but adds a nice warmth to the flavor.
