Ingredients

  • 4 white fish fillets (snapper or tilapia)
  • 1 cup full-fat coconut milk
  • 2 tbsp fresh lime juice
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1 cup bell peppers, sliced (mixed colors)
  • 1/4 cup fresh cilantro, chopped
  • 2 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika

Instructions

  1. In a large skillet over medium heat, combine vegetable broth and coconut milk. Stir until bubbling.
  2. Add minced garlic and grated ginger; sauté until fragrant.
  3. Introduce sliced bell peppers, cumin, and paprika; simmer for 5 minutes until peppers are tender.
  4. Caresfully add fish fillets to the broth; poach for about 10 minutes or until fish flakes easily with a fork.
  5. Before serving, drizzle with fresh lime juice and garnish with cilantro.
