- 4 white fish fillets (snapper or tilapia)
- 1 cup full-fat coconut milk
- 2 tbsp fresh lime juice
- 3 garlic cloves, minced
- 1 tbsp grated ginger
- 1 cup bell peppers, sliced (mixed colors)
- 1/4 cup fresh cilantro, chopped
- 2 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
Instructions
- In a large skillet over medium heat, combine vegetable broth and coconut milk. Stir until bubbling.
- Add minced garlic and grated ginger; sauté until fragrant.
- Introduce sliced bell peppers, cumin, and paprika; simmer for 5 minutes until peppers are tender.
- Caresfully add fish fillets to the broth; poach for about 10 minutes or until fish flakes easily with a fork.
- Before serving, drizzle with fresh lime juice and garnish with cilantro.
Notes
- For a spicier version, add chopped jalapeños or chili flakes.
- Serve with rice or quinoa for a complete meal.
