Description

  • ¼ cup coconut oil
  • 1 teaspoon vanilla extract

  • 1 cup dark chocolate chips (dairy-free if needed)
  • 1 tablespoon coconut oil

Instructions

  1. Prepare the Shortbread Base: In a mixing bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of salt. Stir until a dough forms. Press the dough evenly into a parchment-lined 8×8-inch baking pan. Place in the freezer for 20 minutes to set.
  2. Make the Caramel Layer: While the base chills, prepare the caramel. In a small saucepan over low heat, combine almond butter, maple syrup, coconut oil, vanilla extract, and a pinch of salt. Stir gently until smooth and fully combined—about 3–5 minutes. Let it cool slightly, then pour over the chilled shortbread layer. Return the pan to the freezer for 30–40 minutes until firm.
  3. Melt the Chocolate Topping: In a heatproof bowl, melt the dark chocolate chips with coconut oil, either in the microwave in 20-second bursts or over a double boiler. Stir until smooth and glossy.
  4. Assemble and Set: Pour the melted chocolate over the firm caramel layer, tilting the pan gently to spread it evenly. Place the bars in the fridge for another 15–20 minutes or until the chocolate is fully set.
  5. Slice and Serve: Once firm, remove the bars from the pan using the parchment paper. Use a sharp knife to cut into squares or classic Twix-like bars. Wipe the knife between cuts for clean slices.
