Description
A quick and delicious stir-fry made with wide egg noodles and fresh vegetables.
Ingredients

- 8 oz wide egg noodles
- 3 tbsp low-sodium soy sauce
- 2 tbsp vegetable oil
- 3 garlic cloves, minced
- 1 cup mixed vegetables (fresh or frozen)
- 2 green onions, chopped
Instructions
- Cook the egg noodles in salted boiling water according to package instructions until al dente (about 6-8 minutes). Drain and set aside.
- In a large skillet over medium heat, heat vegetable oil. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add mixed vegetables to the skillet and stir-fry for 3-4 minutes until tender.
- Combine the cooked noodles with the sautéed vegetables in the skillet. Pour in soy sauce and toss gently until evenly coated.
- Garnish with chopped green onions and serve hot.
Notes
- This dish can be customized with any vegetables you have on hand.
- For added protein, consider adding chicken or tofu.
