- 1 cup dried black-eyed peas
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 2 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- 2 tbsp olive oil
Instructions
- Set your Instant Pot to ‘Sauté’ and heat olive oil. Add the chopped onion and minced garlic; sauté until fragrant.
- Stir in smoked paprika and cayenne pepper; cook for an additional minute.
- Add rinsed black-eyed peas and vegetable broth; stir well to combine.
- Seal the lid, set to high pressure for 15 minutes, and allow natural release for 10 minutes.
- Carefully remove the lid, stir gently, and adjust seasoning as needed before serving.
Notes
- For a spicier dish, increase the cayenne pepper to taste.
- Ensure the black-eyed peas are rinsed before adding them to the pot.
