Ingredients

  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 2 tbsp olive oil

Instructions

  1. Set your Instant Pot to ‘Sauté’ and heat olive oil. Add the chopped onion and minced garlic; sauté until fragrant.
  2. Stir in smoked paprika and cayenne pepper; cook for an additional minute.
  3. Add rinsed black-eyed peas and vegetable broth; stir well to combine.
  4. Seal the lid, set to high pressure for 15 minutes, and allow natural release for 10 minutes.
  5. Carefully remove the lid, stir gently, and adjust seasoning as needed before serving.
