Description

Delicious Taco Beef Nachos topped with sour cream and fresh cilantro.


Ingredients

  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, rinsed
  • 1 cup bell peppers, chopped (mixed colors)
  • 2 cups tortilla chips
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked.
  3. Stir in the taco seasoning and add black beans and bell peppers; cook for 3-5 minutes until heated through.
  4. Layer half of the tortilla chips in a 9×13 inch baking dish. Top with half of the beef mixture and half of the cheese.
  5. Repeat layers with remaining ingredients.
  6. Bake uncovered for 20-25 minutes until bubbly and golden brown.
  7. Let cool slightly, then top with sour cream and fresh cilantro before serving.
