Roasted Gnocchi with Cherry Tomatoes and Zucchini

Description

This delicious roasted gnocchi dish combines the flavors of fresh vegetables and Parmesan cheese for a wholesome meal.


Ingredients

Scale
  • 1 lb store-bought gnocchi
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced
  • 2 tbsp extra-virgin olive oil
  • Zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place the gnocchi, cherry tomatoes, and zucchini on the baking sheet.
  3. Drizzle with olive oil and sprinkle with salt, pepper, Italian seasoning, and lemon zest. Toss to coat evenly.
  4. Roast for 20-25 minutes until golden brown and fragrant.
  5. Remove from the oven, sprinkle with Parmesan cheese, and return to the oven for an additional 5 minutes until melted.
  6. Squeeze fresh lemon juice over the top before serving.

Notes

  • For added flavor, you can include fresh basil or parsley before serving.
