Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz spaghetti
  • 2 tbsp olive oil
  • 4 oz cream cheese
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 tsp garlic powder
  • 1 cup chicken broth

Instructions

  1. Chop the chicken into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and garlic powder, and cook until golden brown (about 5 minutes).
  3. Boil salted water in a pot and cook spaghetti according to package instructions until al dente.
  4. Stir cream cheese and chicken broth into the skillet with cooked chicken until melted and creamy.
  5. Drain the spaghetti (reserve some pasta water) and add it to the skillet. Toss until well coated; add reserved pasta water if needed for consistency.
  6. Serve hot, topped with shredded cheese.
