Description

A refreshing salad with strawberries, spinach, and a light dressing.


Ingredients

  • 2 cups fresh strawberries, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cups baby spinach or mixed greens
  • 1 cup cucumbers, sliced
  • 1 cup fresh blueberries
  • ½ cup feta cheese or mozzarella pearls (optional)
  • ¼ cup chopped pecans or walnuts (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • 12 teaspoons honey
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Wash and dry all fruits and vegetables thoroughly.
  2. In a large bowl or platter, layer the spinach or mixed greens.
  3. Add strawberries, tomatoes, cucumbers, and blueberries evenly on top.
  4. Sprinkle feta or mozzarella and chopped nuts, if using.
  5. In a small bowl, whisk together olive oil, balsamic vinegar (or lemon), honey, salt, and pepper.
  6. Drizzle the dressing over the salad right before serving.
  7. Toss gently or serve as a colorful layered display.
