Description

Delicious pumpkin cookies topped with a creamy cinnamon frosting.


Ingredients

  • 240 g all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 115 g unsalted butter, softened
  • 200 g granulated sugar
  • 160 g pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 60 g unsalted butter, softened (for frosting)
  • 120 g powdered sugar
  • 1 tsp ground cinnamon (for frosting)
  • 12 tbsp milk (for frosting)

Instructions

  1. Preheat oven to 175°C / 350°F. Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat butter and sugar until fluffy.
  4. Mix in pumpkin puree, egg, and vanilla until combined.
  5. Gradually add dry ingredients to wet, mixing until just combined.
  6. Drop dough by rounded tablespoons onto baking sheets. Flatten slightly.
  7. Bake for 10–12 minutes or until edges are lightly golden. Cool for 10 minutes on sheet, then transfer to wire rack.
  8. Beat together butter, powdered sugar, cinnamon, and milk until smooth. Adjust consistency as needed.
  9. Spread cinnamon frosting on cooled cookies. Serve or store in an airtight container.

  • For a spicier flavor, consider adding more ground cinnamon or nutmeg.
