- 1 cup (226 g) unsalted butter, softened
- ¾ cup (150 g) sugar-free sweetener (like erythritol or monk fruit)
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 2¼ cups (280 g) all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 1 cup (175 g) sugar-free chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and sweetener until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Fold in sugar-free chocolate chips.
- Scoop dough into 1½-tbsp balls and place on the prepared baking sheet.
- Bake for 12–14 minutes, until edges are lightly golden. Centers may appear soft but will firm as they cool.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- For a chewier cookie, slightly underbake them.
- Experiment with different sugar-free sweeteners for varied tastes.
