Description

A comforting chicken rice soup that is packed with flavor and perfect for any meal.

Ingredients

Scale
  • 1 tablespoon olive oil (a splash of this adds richness)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 medium carrots (diced)
  • 2 stalks celery (chopped)
  • 6 cups chicken broth (homemade or store-bought)
  • 2 cups cooked chicken breast (shredded)
  • 1 cup long-grain white rice (absorbs flavors beautifully)
  • 2 leaves bay leaves (remove before serving)
  • 1 teaspoon thyme (dried or fresh)
  • to taste salt (season to taste)
  • to taste pepper (season to taste)

Instructions

  1. Sauté the aromatics in a large pot over medium heat. Add diced onions, garlic, and carrots, stirring until they soften and become fragrant, about 5 minutes.
  2. Add the chicken breasts to the pot, pouring in enough broth to cover them completely. Bring it to a gentle boil, reducing heat afterward to simmer for about 20 minutes.
  3. Shred the chicken when it’s fully cooked and tender. Remove the breasts from the pot and use two forks to pull apart the meat into bite-sized pieces.
  4. Stir in rice and additional broth if needed, and let it simmer for another 15-20 minutes. The rice should be tender and fluffy, soaking up all those delicious flavors.
  5. Season your soup with salt, pepper, and herbs of your choice—thyme or parsley work beautifully! Taste as you go to find that perfect balance.
  6. Serve hot in bowls with a sprinkle of fresh herbs on top for color and freshness. Enjoy each comforting spoonful of this hearty dish!

  • This recipe can be easily adjusted to include other vegetables or spices based on personal preference.
  • For a creamier texture, consider adding a splash of cream or milk during the final simmering stage.
